Burning Chrome is a collection of short stories, which I personally feel Gibson's style shines best in. It's like a really fancy dessert - you want to savor every little bit. His Sprawl Trilogy - Neuromancer, Count Zero, and Mona Lisa Overdrive - are also very good, IMO. His other stuff is not quite up to that standard - it's a different sort of universe, which doesn't appeal to me quite as much, but your mileage may vary.
